Tip Tuesday: Salad Dressing as Marinade


Something that seems to be an arch nemesis of all at home cooks is chicken. It’s boring. Right? Really, it is something that most families eat a few times a week because it is affordable, a good source of protein and its easy in terms of actually cooking it.

It is really difficult to come up with new creative chicken ideas- especially ones that don’t make your chicken dry. In the last 6 months or so, Tyler has been set on eating chicken as much as we can…like…Monday-Thursday. No boy, no. But, with that being said I have incorporated it more. I don’t really know why he wants to eat so much chicken. Gains, or some bologna? I don’t know. But either way, I had to force myself to come up with some new chicken dishes and expand my repertoire.

So, because I am such a genius, one day I was making chicken caesar salad wraps so of course I needed caesar dressing. Normally, I would make my own, that night? I guess I was lazy, who knows. So there I was in the salad dressing aisle looking for my ingredient when it dawned upon me. “Holy crap, why are there so many salad dressings to choose from?!” If you think about it, any kind of salad dressing is basically just a marinade. A pre-bottled, wonderfully already made marinade! But the real question was, would it be as good as I thought? In the several weeks to follow I tested out many different dressing marinades: zesty italian, ranch, chipotle etc. etc. They all turned out great, super easy to do just grab your chicken breasts, put them in a ziploc bag, pour your marinade in, refrigerate for at least 30 minutes, and voila! It made the oh so bland chicken breast really flavourful and kept them pretty moist! I alternated between making the chicken and pan frying it and they were both great!
